Greek Salad for Blog Hop Wednesdays

This salad fit the Blog Hop Wednesday's bill quite accidentally. I was going to make it anyways because I had to finish up all the cucumber and the yellow bell peppers. Plus since I'd used up half the feta, the other half needed to be used up super quick.

So when I was paired with Kavitha of Foodomania, I was sure I'd lucked out. There were so many recipes that I could have tried out, but this one sort of fell into my lap.

I made a few changes to the salad, because well, that's what I had in my refrigerator and instead of using lettuce, ended up using Chinese cabbage, which might I add,  added quite a crunchy texture to the salad. Also in the dressing I used balsamic vinegar instead of red wine, only because I totally adore balsamic. That said, I spent a lot of time on her blog, thinking of things I should make at leisure, because she has some lovely recipes.

Anyhoo, this is a super simple salad and I hope more peeps would want to make it.

Greek Salad with Feta and Olive
Adapted from Foodomania

For the Salad
2 cucumbers
2 tomatoes
1 bell pepper (any colour)
1 bunch leafy green (I used napa cabbage, please use some sort of lettuce)
1 small onions thinly sliced
1 tblsp balsamic vinegar
1/4 cup sliced olives
100 gms feta

For the dressing
2 tblsp balsamic vinegar
4 tblsp extra virgin olive oil
1/2 tsp dried oregano
Salt and Pepper to taste

Directions

1. Peel, deseed and dice the cucumbers and tomatoes. Dice the bell pepper as well.
2. Tear the leafy greens and soak them in ice cold water. Slice the onions and soak them in the balsamic vinegar
3. In a salad bowl, scatter the olives over the cucumbers, tomatoes and bell pepper. Add the onions. And dice the feta cheese scatter on top.
4. For the dressing, using a balloon whisk, whisk together salt, pepper, olive oil, vinegar and oregano. Dress the salad with it, serve immediately.

  11. The Greek salad done well with perfectly ripe ingredients, plump, shiny black olives and dark green peppery Cretan olive oil is a fresh tasting.
