The next day, when all the leftovers had been cleared out, I decided to make things from the pears. A pear crumble seemed the obvious choice, until I realised I’d run out of everything for breakfast. No bread, no atta, no nothing except for one lonely egg sitting in my fridge.
As I started googling for things to do with pears, I stumbled on this recipe below for pear and chocolate muffins! It just seemed the done thing! I tweaked it a bit and ended up making lovely large muffins which were moist, bursting with fruits and had lovely molten chocolate in it.

I didn’t use any chips. Instead I bashed a chocolate bar with a rolling pins till I got half a cup of chunks and chippers which I was happy to use. And I think that made all the difference, because the muffins were studded with large pieces of chocolate. I cut the pears in large dices as well and truly that is the trick for these juicy muffins.
Unfortunately I took horrid pictures that day. And so for a whole week I’ve sat on them wondering what to do. But these muffins were too good to not be able to share. So this weekend I baked another batch and got my friend N to take me some pictures. And I have to tell ya, they came out amazing all over again.

Adapted from Jo Cook's Pear and chocolate chip muffins
Makes 6 large muffins
3/4 cups all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3 pears peeled and diced
1/3 cup sugar
1 large egg
1 tsp vanilla
4 tblsp melted butter
1/2 cup chocolate chunks
1/4 cup milk
1. Preheat oven to 190 degrees centigrade.
2. In a large bowl, mix the flour, baking soda, baking powder, and salt together.
3. In a separate bowl, mix the melted butter, egg, vanilla, milk and sugar together. Add the pears and mix.
4. Add the wet ingredients to the dry ingredients and either using a whisk or a wooden spoon mix everything but do not over mix. Add the chocolate chips and mix until the chocolate chips are well incorporated in the batter.
5. Fill the a muffin wrapper-lined tray almost to the top and bake for about 20 to 25 minutes.
