Chocolate Chunk Oat Cluster Cookies



I spent all of last weekend baking. Yes ofcourse it was hot. It was a 100 degrees and imagine two ovens running at the same time, it was a sauna. But I took my mini breaks and paced myself and so yes, I played it cool.

But by Saturday night, my house was smelling so wonderful that it was well-worth the effort.

I baked a lot of cookies this weekend nearly 8 dozens including Coconut and Lemon Cookies which are slowly becoming the husband's favourite. Other than I made Espresso Sugar Cookies which turned out to be totally delicious when dunked in some milk. But you've got to hang on for the recipe.



These cookies are quite awesome even though they don't have a drop of butter. There's so much oats that you'd think that's the only flavour you could possible be tasting. But I don't know how, but it all comes together. 

I used chocolate bars that were lying around the house to make the chunks, so I got a mixture of milk and dark chocolate, but I wish I'd put in some walnuts to make them even more awesome. 

Super easy to make, the dough doesn't need chilling, you can use a spoon to drop them down. To make them crisp bake them a little longer than the baking time of 15 minutes. Dunk and enjoy.




Chocolate Chunk Oat Cluster Cookies
Makes 3 dozens

Ingredients
¾ cup  olive oil
1 cup firmly packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon vanilla
1 ¼ cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
3 cups rolled oats
2/3 cup dark chocolate cut into chunks
2/3 cup milk chocolate cut into chunks

Directions

1. In a bowl, measure out the olive oil, both the brown and white sugars and the eggs. Beat until creamy. Add the vanilla and  let it sit.
2. In a separate bowl add the whole wheat flour, cinnamon, salt and baking soda. Stir in the oats. 
3. Add the dry ingredients to the wet ingredients. Stir till well combined. Add the chocolate chunks to it.
4. Drop the cookies using a spoon onto a cookie sheet and bake at 180 degree centigrade for 15 minutes.

  2. I love cluster cookies. Anything with oats works for me. Interesting that these are so low cal too. Nom Nom Nom... you are creating new cookie monsters with each post! Save some for me pleaaaaaase!!
